The man who’s known for searching out a city’s most bizarre dishes—and being willing to try everything from worms to eyeballs—was in San Antonio in March and turned parts of his Alamo City trip into a full episode that will air today, June 15, at 8 p.m. In one clip from the episode, Zimmern learns to cook sliced beef cecina alongside Chef Johnny Hernandez (of La Gloria, La Fruteria and El Machito) and in another he enjoys a piece of fried rattlesnake at a ranch in nearby Yancey. Zimmern says the ranch owners caught the snake just two days earlier and after killing it, dunked it in beer batter and fried it in pork lard. “It’s delicious,” he says in the clip, adding that it’s “night and day” from the “frozen crap” you might try elsewhere. According to the Travel Channel, the hour-long show also will feature Zimmern tasting calf balls, quail and crickets.
